Sorry I’ve been MIA for almost a month! Life has been crazy. I’ve been enjoying my days without taking pictures of every single thing I eat and not worrying about blogging at night. I have taken some pictures here and there that I will share with you!

To start off, Jhon and I have a new addition to our family!

This is our new puppy, Diesel! He is a black lab mix. We adopted him from an animal shelter so they’re not sure exactly what he’s mixed with! He’s about 8 months old and is such a good pup! He has his moments where we think what the hell did we get ourselves into…but overall he’s a mush! I finally have my own pup to go walking/running with!

Onto food…here are a bunch of things I’ve been eating during the past month!

Jhon and I finally took out our fancy rice cooker and used it. Man, we are in love. This thing is absolutely amazing! I think I ate rice every night for a week after we perfected it! We generally make jasmine rice, which is like sticky white rice. I topped the rice with freshly grated cheese, tomato sauce, and chicken. AMAZING, amazing combination!!

This salad consisted of romaine lettuce, grapes, chicken, carrots, tomatoes, parmasean cheese and was topped with some raspberry pecan dressing!


I finally got my OWN burrito from Chipotle! If you like burritos, you need to try this place! It’s out of this world! The burrito is HUGE but of course I could finish it! Inside is grilled chicken, jasmine rice, pico de gallo, cheese, sour cream, pinto beans, lettuce, and tomato! It’s just absolute deliciousness!

WW British tortilla, almond butter and a sliced up banana! One of the most amazing combinations you will ever taste!

During my time away, I also made the most amazing, meaty chilli ever! Of course I served it on top of my favorite jasmine rice! Love, love, love it!

On a more fattening note, a 1 lb cheeseburger with sweet potato fries and onion straws! Honestly, one of the most amazing burgers I have ever had in my life! I actually ordered the 1/2 lb burger…but it came out as the 1 lb burger. It was delicious! The sweet potato fries were to die for…and even the onion straws were good and I normally don’t eat them!

A hummus addiction also took place. Many carrots and other veggies were dipped into this baby x3!

My first batch of turkey meatballs came out fantastic! They were so good they were all finished that night!

With my turkey meatballs, I used a pita and added meatball halves with sauce and freshly grated cheese. On the side I also had a plum!

This past weekend was Jhon’s sisters sweet 16 and my mom’s pampered chef party! As a result, many amazingly delicious foods and desserts were consumed. My favorite cake was this baby:

The cake was surrounded by rainbow cookies and then filled with chcoolate cake, chocolate mousse, and raspberry mousse. Oh and topped with chocolate ganache! It was the most deliciously tasting cake I’ve probably ever had!

This week I committed to better eating. Less sweets and less calories.

The week started off with this baby nice and full.

Apples, oranges, pears, peaches…plus a ton more produce in the refrigerator! Got me off to a good start!

A WW tortilla filled with chicken, spinach, tomato, and sautéed peppers, onions, and mushrooms. I also spread a light swiss LC cheese wedge on the inside of the tortilla when it was warm!

Raspberry Chobani with 2/3 cup TJs fiber cereal.

Tuna mixed with celery and onion stuffed inside of 5 small WW pitas. On the side was some sugar snap peas!

1/2 cup quick oats with cinnamon and a sliced up peach!

WW tortilla pizza with tomato sauce, chicken, broccoli, zucchini, onion, mushroom,  peppers, and topped with some cheddar cheese!

Tonight for dinner I had a BLT with 4 slices of turkey bacon, tomato, and romaine lettuce with a LC light swiss cheese wedge. On the side I also had slices up peppers and sugar snap peas.

And that concludes all the pictures I have! Hopefully this week continues on with healthy eating.

I’ve found a love for working in the middle school, which means I’m up much earlier…an hour and a half earlier. But it also means that I get out of school by 2:30! Hopefully I can get my booty to the gym more! I plan on going to kickboxing tomorrow!! Let’s see if I can make it happen!!
