Mom’s Birthday Weekend!

Long time no see! I apologize for my absence. This weekend was crazy! Lots of fun and lots of delicious food & drinks!

Let’s see…Friday night was my mom’s birthday/psychic/massage party! It was a great time! I totally forgot to snap pictures of our food spreads, but I did capture one picture of the best dip ever! This dip is by no means healthy but it sure is tasty!

Layered is:

  • One bar of cream cheese
  • One can of Hormel turkey chili
  • Cheddar cheese
  • Olives

MMMM…serve with Tostitos scoops and you are good to go!! Easy and delicious!!

Saturday involved law school applications for the hubby and some organizing/cleaning for me until work in the evening. I put together a delicious breakfast for the two of us because I was craving eggs.

I used leftover italian bread to create an egg white sandwich with turkey bacon, cheddar cheese, and turkey sausage! On the side was some fresh pineapple! Great breakfast!

Saturday I was craving sweets, probably since I ate a ton on Friday. I picked this up for Valentine’s Day dessert and had to have some during the day. I can honestly say this is one of my FAVORITE ice creams EVER!

Caramel Coconut Cookie ice cream and it only has 110 calories per serving!! It tastes super decadent and creamy and ahhh I could devour the whole carton!!! Too bad it’s limited edition.

Later in the day, we stopped by to pick up a slice of pizza before work at one of our favorite places. I got a plain cheese slice and we shared this new, fresh looking slice:

It was made with fresh mozzarella, tomatoes, basil, and balsamic glaze! Work was boring…a mindless buffet.

Sunday was my mom’s 54th birthday!! We surprised her with a reservation for brunch at a restaurant on the water! Unlimited mimosas, bloody mary’s, and champagne to be enjoyed with a buffet brunch with a carving station, omelette bar, and tons of other yummy food items!

So delicious! Jhon and I visited the same restaurant a few weeks ago. They had very similar food options except this time they had the most amazing salmon I have ever tasted! I had to go back for seconds…two large plates of food! We also squeezed in some dessert: homemade rice pudding, blueberry scones (my favorite!!), and gooey oatmeal raisin cookies. All in all, amazingly delicious. We left STUFFED!

Later that night, we stopped by my mom’s to celebrate with some birthday cake!

Light at the End of the Tunnel

This weekend is a huge blur. As soon as we thought Diesel was better, he surprised us with something to make us think otherwise. We ended up taking him to the vet Sunday, where he was given barium to see what was going on inside of him. Today we got the final results and everything looks good! Crossing our fingers it stays that way. We’ve already spent over $1,100 on this whole issue. We need pet insurance.

Today he was so much more himself. His appetite is HUGE and he’s playing with his toys again. I was instructed to make him boiled chicken and steamed rice for his meals so I spent a good hour before preparing tons of food for him for the next several days!

As for my meals, they’ve been all over the place. Saturday night we went out for Jhon’s father’s birthday to a Colombian restaurant. I wasn’t sure what to get so I went with something simple, a taco salad.

It was very different from what I had expected. I ate about 3/4 of it. The flavor was very unique. I’m so used to my tacos that these tasted completely different.

Sunday morning Jhon and I were out of the house early to get the dog to the vet. It actually wasn’t that early (around 10am) but he was up again until 3am so it felt really early. We were too tired to make breakfast so I actually ended up having some sweets at my mom’s once we got there (horrible choice). We ended up picking up a slice of pizza near my parent’s house around noon.

I had a sorrento slice, which is fresh mozzarella and pesto topped with roasted red peppers, tomato, onion, and balsamic glaze! Sooo good!!!

Jhon headed off to work and I picked up the dog, brought him home, and did some homework.

For dinner we tried a new recipe:

Turkey bacon guacamole grilled cheese!! OH MY GOSH! This sandwich was out-of-this-world amazing! I made the guacamole from:

  • 1.5 ripe avocados
  • 1/2 lime juice
  • 1/2 roma tomato diced
  • 1 extra small onion
  • salt & pepper

That’s it! It came out super fresh and delicious! We used some white American cheese and cheddar and voila!

I also had plenty other snacks throughout the day.

Then Monday. I was supposed to work but we had a snow day. The roads are still horrendous. Our street is barely plowed. It takes forever to drive to even the most simple places.

Back to my normal breakfast: blood orange Chobani with 2/3 cup Trader Joe’s high fiber cereal. After this, Diesel went back to the vet where we got the good news!

My favorite. I will never say no to froyo. I brought my sister-in-law because she was awesome and came with me on a bunch of errands.

Jhon and I made a trip to Trader Joe’s earlier this evening before the roads got icy. It rained all morning so the roads are flooded with the melting snow and rain. As the temperature heads below freezing, it can’t be good. I was nervous to drive to my favorite Monday evening sculpting class so I decided we would cook something fun for dinner.

Since I haven’t been eating as well as I can, I decided to make a side salad with my pizza. My plate:

I had a corner slice with a romaine side salad. I actually went back for a second slice because it was delicious! I also finished the last of my pink Relax Riesling.

Just got the news that tomorrow is another snow day. I could have guessed it because the road would be impossible for the busses to pass through.

Tomorrow’s plan includes a trip to the gym for some cardio, healthy eating, and more job searching/applications. I also have class for four hours. Hopefully my 30-minute commute to class isn’t horrendous!

I’m off to shower, relax, and read! I read so much in January and now I’m slacking. I think it’s probably because my book isn’t anything special. Gotta finish it though so I can move on to the next one!

Night!

Eventful Night

Last night was a really rough night. Diesel was up until 5am moaning, shaking, and just couldn’t get comfortable at all. You could see the discomfort in his eyes, which was heart-breaking. We needed to take him to a vet, yet none were open and at that point we had about 18 inches of snow on the ground with more on the way. Our roads weren’t plowed and our cars would not make it. The snow was falling at a rate of 4.5 inches per hour! There was no way we were getting out, plus all the highways and roads were closed. High fines were given to people traveling them.

This morning he woke up and he was a whole different dog. He played in the snow and really enjoyed our 25-minute walk around the neighbor where he had to jump through feet of snow! Here’s a few pictures of his crazy self:

I had to share the picture above. I think he looks so cute! I took this one before the snow really got started, but you can see it definitely started to increase in depth.

As you can tell, he loved every bit of it. Too bad he wasn’t at his prime to enjoy it but I really think he had a great time!

Let’s back up to eats from yesterday. After work I came home and wanted something sweet and quick. I bought two boxes of this Fiber One Chocolate Cereal when they were on sale for $1.99. I’m so glad I did because it’s so good! You can’t really even taste that it’s Fiber One!

I had 1 cup with 1/2 cup Almond Breeze milk. Super satisfying and under 125 calories!

A few hours later, Jhon and I didn’t know what to make for dinner. We ended up with healthy loaded sweet potatoes.

  • Sautéed onions and mushrooms
  • Mozzarella, tomato, and basil chicken sausage
  • 1/4 cup tomato sauce
  • sprinkle scallions
  • sprinkle parmesan cheese

This dinner was fantastic! Made us super full and content.

Before the snow really got bad, we stopped by a wine/liquor store for some wine since we knew we’d be spending lots of time inside this weekend. The store was packed out with people stocking up for the storm. I picked up this bottle because I love sweet white wine, specifically Riesling. This one hit my taste buds in the right place!

While playing board games with Jhon’s sister, I drank about 2/3 of this bottle! I would definitely recommend it to anyone who likes sweet white wine!

That pretty much sums up our night. I definitely went over my calories but it was worth it. Until Diesel became restless, we were having a great Friday night in. I felt so bad for the pup, but hopefully we can get this situation resolved soon! We have a vet appointment Sunday at 10am if things don’t turn around.

After sleeping 3 hours last night, I wasn’t very hungry this morning. We spent a good hour and a half outside and then I finally realized I needed something in my belly. I reached for a pear.

After a 4.5 hour nap, I woke up and kinda threw random things together.

I had an apple, a cup of Fiber One chocolate cereal with Almond Breeze milk, and about 2/3 cup Kellogg’s blueberry Special K that needed to be finished.

Now I need to get started on my homework assignment due Sunday night. Jhon is resting since he only slept for 3 hours last night and has been up with the pup each night this week. He’s such a trooper but I can tell it’s taking a toll on him.

And for the dog, he finally ate various things today. I have these all-natural bones about the size of a half dollar and he scoffed 10 down. He also had a cup of plain cooked brown rice (in 1/2 cup servings at different times) with some chicken broth. Hopefully this helps move things along and he will poop!!

Unexpected!

After our little cocktail hour, Jhon and I took a quick trip to BJ’s wholesale. I wanted to buy some romaine lettuce and like I said before, I can’t spend $3.99 on three romaine hearts. So instead, I spent $4.99 on six! We also picked up a few other things. Two that I would like to share are:

A while back, my father picked up these Blueberry Almond Pops from 180Snacks and my family was in love! I saw them again today and just had to get them! $3.99 for this huge bag. Definitely can’t beat that!

I also picked up these huge lavash bread wraps. They’re HUGE for 100 calories! I haven’t tried them yet but them seem as though they’re going to be a staple in my kitchen!

Dinner ended up healthy thanks to my fresh romaine lettuce:

I topped my salad with rotisserie chicken, blue cheese, tomato, and about 2 tbsp of Trader Joe’s balsamic vinaigrette. Delish!

In other news…my sister and I booked a Bahama cruise for February 26-March 6 of this year! Only about 4 weeks away! It was completely spontaneous and totally unexpected.

This means it’s time to get my booty to the gym as much as possible and really get on top of my eating habits! I did not expect to be sportin’ a bikini in February!! I already prepared my lunch for tomorrow since I’m working! It’s a replica of dinner tonight. Time to get serious!

It should be a ton of fun!! It’s just my sister and I going so we will have plenty of time to relax and get some quality time in! Can’t wait!!

Sixteen Months

Today marks 16 months since Jhon and I tied the knot! We began a tradition that on the 23rd of every month we would use our toasting glasses from our wedding! I hated seeing them sitting in the box so I figured this was a great alternative.

Tonight we toasted with our favorite wine, Red Cat! If you’ve never tasted this wine, you really should. I don’t particularly care for wine unless it’s cold white wine and sweet. This is red wine, which I normally don’t enjoy, and I absolutely love it!

Wonderful Weekend!

So far this weekend has been wonderful! I took an hour long nap yesterday before making a taco salad for dinner. I used 80% ground beef when I normally use ground chicken or turkey so they tasted slightly more indulgent. I had some multigrain Tostitos with the salad.

Yum! We spent the evening celebrating our friend’s birthday at a local bar. We’ve actually never been to it so it was great to do something new. I had a bit too much to drink but we had a fantastic night. Unfortunately I didn’t get into bed until around 4:30am after eating Taco Bell. Those new grillers are amazing drunk food!

Today my mom hosted that massage/facial/psychic party that I spoke about the other day. My massage was amazing. I didn’t plan on seeing the psychic but when my mom and sister came out, I decided I had to. He was phenomenal! He reads for tons of celebrities and even read for Princess Diana! I forget his name now, but I will link it once I get in touch with my mom. He was spot on with everything and it was very interesting to hear all the things he had to say. My grandmother passed away in December and she was right there for all three of us, my mom, my sister, and I!  A few things I found interesting:

  • He claims I’m supposed to be pregnant! (AHH!) Apparently I’m very fertile and won’t have trouble conceiving once we’re ready. 
  • My husband is my soul mate! (I could have told you this)
  • Our plan to move to Delaware is a very positive change that will only bring us wonderful things!
  • My teaching career will be very successful!

Very exciting news…besides the first one since I hope to move and get settled before having a baby.

As for food today, I snacked all day long. The party was more of an open house so from 1:30-8:30 people were in and out. We prepped tons of appetizers. I didn’t have any real meals. Here’s a photo of our fruit, veggie, and cheese and cracker spread.

I enjoyed quite a bit off of these plates! We also had some hot food and desserts prepared so I’m feeling rather full right about now. Time to relax a bit. I think we may be heading out to get together with some of our friends a little later.

Last but not least, today I found out a wonderful friend of mine asked me to be a bridesmaid in her 2014 wedding! I’m unbelievably honored and am looking forward to all the preparations and events leading up to the big day! Love you Maria!
