Not really dessert…

Today I had a slight sweet craving. While picking up some apples I spotted pineapples that looked very fresh. I decided to pick one up and I knew I had a ton of calories left over so it would fit perfectly into my daily count! I ended up having 10 ounces (ALOT!!) of fresh pineapple and 2/3 cup TJs fiber cereal. I would eat this whole box if I could and that would NOT be a good thing! I know this isn’t dessert to most people but it tastes pretty darn good to me!


Lotta Veggies!

Tonight for dinner I made a huge stirfry! Once again I added a few too many veggies. My belly is gigantic right now! In the mix tonight: broccoli, red pepper, zucchini, onion, spinach and 5 ounces of grilled chicken! I also added some paprika and garlic powder for some flavor. I really wanted fresh garlic but we were all out..boohoo! I enjoyed this dinner with a cup of blackberry black tea because it’s so damp and chilly out!

After work today, my fiance and I FINALLY ordered our wedding invitations!! I absolutely love them! They are exactly what I wanted- unique and classy!

Happy Thursday!

Almost Friday! Another lousy day weather wise. Where did the beautiful weather from Tuesday go?! Hopefully this super rainy month of April will change once we get into May! Breakfast was the usual- perfect! I did not have an apple today because I didn’t have any that looked good so I had a raspberry Chobani instead. I’ll go pick up some fresh apples later and some berries for tomorrow! Lunch was  a WW tortilla with 3 ounces of grilled chicken, baby spinach, and cherry tomatoes. I also added about a tablespoon of spicy brown mustard for some extra flavor! I was surprised how much I actually enjoyed it! I also had some orange and yellow peppers and a few extra cherry tomatoes on the side.

As I’m writing this post it just started raining like crazy with thunder in the distance. I loooveee thunderstorms! I’m off to enjoy this blah but awesome weather!

Egg whites & turkey bacon

After work today I came home to make myself some dinner before kickboxing. I decided a WW tortilla with egg whites, turkey bacon and a laughing cow cheese wedge sounded fantastic. I feel like it’s been a while since I enjoyed this lovely dish. For veggies I had some broccoli sautéed with onions (because our fridge is overflowing with broccoli) and cherry tomatoes. It definitely filled me up!

Kickboxing was very intense tonight. My quads are always sore because every class I take or workout I do involves some type of quad workout. Sometimes they get in the way and other times I can push through the pain. Tonight was a little of both. I ended up with a fantastic workout. My friend and I decided to do some time on the treadmill before heading home for the night and got in a 30 minute fast walk. We ended up chatting most of the time because she forgot her ipod so I only got in 2 minutes of running, which was fine because I was pooped! It was nice to catch up with her!

I just got home from the gym and enjoyed a blueberry Chobani with 2/3 cup TJs fiber cereal. This is like dessert to me. I could honestly eat this every night!! Tomorrow I am weighing myself for the first time since the 17th and I’m quite nervous about it because of all my cheat days/meals! Cross your fingers for me!! Off to shower! Night!

Mozzarella Laughing Cow Cheese = Amazing!

Another boring day for Jaime. I really need to get my career started. Too bad there are no teaching jobs or I’m just not looking hard enough but I do know they are veryyy limited if there are any.

Breakfast was my usual and I scoffed it down within minutes because I was very hungry, followed by my usual apple at noon! Lunch I decided I would try something new today.  I made a raw veggie jumble that contained: cherry tomatoes, orange pepper, yellow pepper, cucumber, red onion and 3 ounces of diced buffalo chicken. The star of the meal was the slice of WW toast smothered in mozzarella, sun-dried tomato and basil laughing cow cheese. This is the first time I tried this specific type and I’m in love. It was soooo good!! Definitely worth trying if you like laughing cow cheese! One complaint about my lunch is the red onion. It has such a strong flavor and I’m not sure why I always put it in dishes when I DON’T enjoy it! I think I just love the purple color! Next time I will remember not to use it!

One month from today, Jhon’s best friend will be getting married! We are super excited and so happy for them!<3

Plate O’ Veggies!

Oh Tuesday! Beautiful Tuesday! It was so nice out today and I was stuck inside with a sleeping baby WITHOUT a laptop because I’m super forgetful lately. I don’t know what’s gotten into me but I’m becoming someone I never was- someone who forgets everything! Breakfast was a banana and fiber cereal followed by a juicy, crunchy apple around noon. Lunch was a bowl of quick oats with cinnamon and 1 cup of fresh blackberries! No picture because it’s the same as yesterday’s breakfast!

After work, which surprisingly went by fast without a laptop (thumbs up!!) I had my weekly iron yoga class which was SUPER intense today. All of a sudden in my downward dog I felt sweat drip from my head to the mat. That does not happen often. Usually I sweat but not to the point that it drips off my head (thumbs up number 2!!)

Dinner was a plate of veggies, colorful and delicious! It included some yellow and orange peppers, cucumber (not a huge fan with the skin on), cherry tomatos (LOVEEE), a sweet potato with 5 ounces of rotisserie chicken and a kiwi for dessert! YUMMM!

Finally…we booked a Pastor to officiate our ceremony. He is such a sweet man, kinda dorky but we really believe he’s going to do an awesome job!!  One more thing to check off the list!

Monday Night’s Dinner!

Last night mixer was rough. I had very little energy to power through the workout. I managed to break a pretty decent sweat but it wasn’t as intense as I would have liked. I think I was filled with unhealthy foods from the weekend that were weighing me down and after my mid-day workout my body was just like NO MORE! Once I got home I made myself a veggie filled stirfry with a ton of veggies and 5 ounces of chicken, perfect! The picture looks very similar to chinese food but I promise it was super healthy and only about 300 calories!

Killer workout!

After breakfast today I took the time to organize my life. Living between two houses (my parents and my fiancé’s parents) is tough sometimes because all my things are always packed and I feel like the bag lady, always carrying 3-5 different bags! We have a ton of gifts between the bridal shower and our engagement party that are spread between the two homes. I feel like there is stuff everywhere and I try to make the best of it. I have always been an organized person and it’s definitely challenging for me to not have a “spot” for everything. In several months (September 1st the LATEST!) we will have our very own apartment with plenty of space for everything to spread out! I CANNOT WAIT!

Anyway, after a couple hours of organizing and laundry, I got my butt to the gym for a KILLER WORKOUT! I’m not a runner by ANY means. I dislike running because I can’t run for long. When I’m running I watch the time go by and the seconds feel like minutes. Usually I use the treadmill for my cardio and walk at a face pace (4.0-4.3). Because I’m getting stronger and more fit, this workout isn’t exactly working for me anymore. This week I have decided to change it up! I’m going to begin interval training, mixing running with walking. I spent an awesome 50 minutes on the treadmill this morning and it felt amazing. I only ran for about 7 minutes of that time but that was a challenge for me. I will keep building up so hopefully I can run for half or even more of the time! I also got in 15 minutes on the elliptical. I really needed this awesome workout after last week!

Once I got home I made a bowl of chicken, quinoa and mixed raw peppers. I also had a tomato sliced on the side with a cup of blueberry green tea! It was delicious!

Back to the Grind.

This week and weekend has honestly been the craziest since I started dieting back February 1st. With my lack of sleep because I was dog sitting and my schedule being different, my healthy eating habits went slightly out the window some days. Saturday started off well besides the fact that it was pouring rain and I did NOT want to go to the gym but didn’t end well, eating wise. Easter Sunday I had to work but with all the goodies around I just gave in at home anddd at work. What a rough weekend for dieting! Today has been much better. I made a deal with my fiancé that I wouldn’t cheat again until May 27th when his best friend gets married or else I owe him $50! That’s over a month and I can totally do it! I just wanted the extra push to keep me super motivated and it’s working! I’m so happy to be back to my normal schedule and eating habits!

Breakfast this morning was different! All of our bananas were very ripe and I’m not a fan so I made some quick oats instead. I mixed in some cinnamon and 1 cup fresh blackberries. Last time I made these they tasted like cardboard so I was pleasantly surprised they tasted pretty good this morning. They actually kept me very full too! I will definitely be trying different options with these oats in the near future!

Quinoa & Feta Stirfry!

This afternoon my last bridesmaid ordered her dress so the order is officially through! The girls should get their dresses mid-July, which is about the same time as mine. Dinner tonight was super quick because I have a meeting for work. I made a stirfry with quinoa and feta. I also had 3 hard-boiled egg whites on the side. I’m off to sing happy birthday to grandma before I head to my meeting! Happy Friday!
