Mom’s Birthday Weekend!

Long time no see! I apologize for my absence. This weekend was crazy! Lots of fun and lots of delicious food & drinks!

Let’s see…Friday night was my mom’s birthday/psychic/massage party! It was a great time! I totally forgot to snap pictures of our food spreads, but I did capture one picture of the best dip ever! This dip is by no means healthy but it sure is tasty!


Layered is:

  • One bar of cream cheese
  • One can of Hormel turkey chili
  • Cheddar cheese
  • Olives

MMMM…serve with Tostitos scoops and you are good to go!! Easy and delicious!!

Saturday involved law school applications for the hubby and some organizing/cleaning for me until work in the evening. I put together a delicious breakfast for the two of us because I was craving eggs.


I used leftover italian bread to create an egg white sandwich with turkey bacon, cheddar cheese, and turkey sausage! On the side was some fresh pineapple! Great breakfast!

Saturday I was craving sweets, probably since I ate a ton on Friday. I picked this up for Valentine’s Day dessert and had to have some during the day. I can honestly say this is one of my FAVORITE ice creams EVER!

Caramel Coconut Cookie ice cream and it only has 110 calories per serving!! It tastes super decadent and creamy and ahhh I could devour the whole carton!!! Too bad it’s limited edition.

Later in the day, we stopped by to pick up a slice of pizza before work at one of our favorite places. I got a plain cheese slice and we shared this new, fresh looking slice:


It was made with fresh mozzarella, tomatoes, basil, and balsamic glaze! Work was boring…a mindless buffet.

Sunday was my mom’s 54th birthday!! We surprised her with a reservation for brunch at a restaurant on the water! Unlimited mimosas, bloody mary’s, and champagne to be enjoyed with a buffet brunch with a carving station, omelette bar, and tons of other yummy food items!

So delicious! Jhon and I visited the same restaurant a few weeks ago. They had very similar food options except this time they had the most amazing salmon I have ever tasted! I had to go back for seconds…two large plates of food! We also squeezed in some dessert: homemade rice pudding, blueberry scones (my favorite!!), and gooey oatmeal raisin cookies. All in all, amazingly delicious. We left STUFFED!

Later that night, we stopped by my mom’s to celebrate with some birthday cake!

The lovely birthday girl! She picked out a low-fat ice cream cake that was delicious!

Hope everyone had a great Tuesday! Mine wasn’t too shabby. Class went quickly and I feel as though I got a lot accomplished today! I’m really excited about the prospect of Jhon, my sister, and I moving! I think I’m most excited for a change and a new place to explore. I love Long Island but I’m really over it. Maybe I’ll feel differently once I leave the only place I’ve ever known as home, but right now, I’m ready for the adventure!

For lunch/dinner today, I made this lavash wrap with a ton of yummy things inside.


I was in the mood for a burrito bowl but decided against it because I had already eaten tortilla chips earlier. As a result, this wrap came about. Inside:

  • Brown rice
  • Pinto beans
  • Pulled chicken
  • Laughing cow french onion cheese wedge
  • Sprinkle of mozzarella cheese
  • Tomato
  • Lettuce
  • Banana Peppers
  • Salsa

It was good, not the best, but I enjoyed it. It was missing sour cream, one of my favorite ingredients lately. I also made a crockpot full of chicken and low-sodium chicken broth last night. I knew I needed protein on hand throughout the week and figured this was my best bet. I enjoy it and it’s simple to cook. I added some spices this time: garlic powder, red pepper flakes, and onion flakes. It came out with tons of flavor!

I brought an apple and 1 cup of chocolate Fiber One cereal to class. Not sure if I shared my love for McDonald’s vanilla ice cream cones, but I really think I have an addiction! Ask anyone I know and they will tell you! Luckily, they have around 170 calories so they are well within my calorie limit! I stopped for one before class to fulfill my sweet tooth!



Ah. There it is! I don’t know why I love them so much but I feel the need to have one every single day. Lately I’ve been better because the roads have been slick due to our huge snowstorm and I’ve been trying to avoid McDonald’s to save money. Even though they’re only $1.09, they definitely add up. I seriously could eat these every single day!! I guess it could be worse right? It’s not like I’m eating Big Macs!

Two weeks until my cruise. I really should buckle down with dieting but I just have so much on my plate lately. I’m going to try to be mindful for the rest of the week. My mom is having a Valentine’s day/psychic/massage party friday and then Sunday is her birthday. It’s going to be a busy weekend with more calories than I would like but I’m going to be mindful and enjoy myself!

Next week will be time to get super serious! I promise!

Weekend Recap

This weekend was definitely a fun one! During the day on Saturday, my sister-in-law and I baked chocolate chip cookie dough stuffed cupcakes with chocolate icing!

I let her choose the recipe so we decided to follow it just as it was. We made everything from scratch, except for the cupcake part.

I just realized that I didn’t take a final picture after we iced them. Anyway, they were great!

Saturday night we ended up going bowling with a bunch of friends. We had a great time! I killed the first round…a turkey right off the bat (3 strikes in row)!!!

We went to this awesome pizza place near my parents house. I got a sorrento slice:


It has fresh mozzarella and pesto under tons of roasted red peppers and tomatoes and crispy baked onions then topped with balsamic glaze! Yummmmm!

Sunday we went out to lunch with friends at my favorite Italian restaurant, Butera’s. They had a 20% off coupon for the Super Bowl so we had to take advantage!

We shared these three HUGE plates:


Grilled Sirloin with a Gorgonzola Cream Sauce (AMAZING!)


Chicken Scarpiello (chicken, sausage, red potatoes, & peppers)


Rigatoni with Chicken & Shrimp Vodka (my all-time favorite dish!)

We also shared two appetizers: eggplant rollatini and tai-style calamari.

After lunch, we were stuffed. I finished up some homework and we hung with a friend of ours until our Super Bowl festivities began.

I didn’t eat much after Butera’s besides a few pretzels and ice cream!

It’s realllyyyy time to get on track. My cruise is in 3 weeks and 1 day and I’m up weight instead of down. AHHHH!
