I have some wonderful news to share! I received news today that I was selected to become a summer school teacher at a dual language school in Delaware!! I’m THRILLED and I can finally say that I am officially moving this June! There are still lots of other details to sort out but I will be teaching a summer literacy program for five weeks! How exciting!!
I also got news this morning that my first class on Tuesday nights is cancelled! This day was off to a great start!
Meals were very similar to yesterday. Breakfast was a blood orange Chobani with 2/3 cup Trader Joe’s high fiber cereal (which I barely remember eating since I was so overjoyed about the teaching position!)
Lunch was 1/2 cup oats, 1 cup fresh blackberries, and 1 tbsp chia seeds- same as yesterday.
I just finished cooking up some chicken for a nice large salad for dinner. Tonight is great because I can eat before class and don’t have to drag my food along with me.
I diced 6 ounces of chicken over romaine lettuce, tomato, and carrots with 2 tbsp Bolthouse Farms chunky blue chesse dressing.
Delicious! This dressing is amazing because it only has 35 calories and is made with yogurt and other great ingredients!
Off to get my things ready for class. This day has flown by and I’m hoping the evening goes just as fast!
